I've tried using the closest of the canned profiles to the Ilford papers and printed a photo book on Ilford Galerie Smooth Luster Duo paper using the profile for Canon's Pro Luster paper. It worked out pretty well!1) Contact Ilford about them making one.
https://ilford.com/printer-profiles-paper-settings/
They say to use "Generic Printer Settings" otherwise.
2) Canon does not yet have ICC Profiles for 3rd party papers. You could contact Canon and ask them when they will have Proo 200 profiles.
https://www.usa.canon.com/internet/portal/us/home/products/groups/3rd-party-papers/
and
https://www.canon.com.cy/printers/inkjet/pixma/software/icc-profiles/
3) You could make one yourself or have one made for you. ($$$)
Example:

A problem in having one made is that services may not have a Pro 200 to work with yet.
4) It appears the print heads for the Pro 100 and Pro 200 are the same.

The firmware and drivers are different, but, you could try the ICC printer profile for the Pro 100.
Please let us know how the generic or Pro 100 profiles works out.
