Yes i think you are correct.

I guess this means I have an issue with my yellow cartridge?

I'm not sure what you are looking for and what that that software is supposed to do, but if you do the setup from CD Epson most likely has installed a program ' Epson Easy Photo Print' which may be the one you are looking for, and you should have Epson CD Print software as well on your system.

The colors are completely off - let's start with a nozzle check as @PeterBJ is asking for.
I downloaded the Easy Photo Print, butr that is not it, as it seems to be quite basic.

I will keep looking, I saw in on a review of the XP-15000, so i guess I need to see if I can find that review again.

that's not the nozzle check pattern but one of the pages for the printhead alignment, that does not help to look to the color problem - probably the missing yellow - you should be able to start the nozzle check via the frontpanel display in the service section or most likely as well via the driver on the maintenance tab.

The upload in post #11 is a nozzle check, and it clearly shows yellow is totally missing.

Easy Photo Print sounds like a Canon program?

What a mess. I cannot figure out where you are at or what you are doing.

Is this a used printer or new?

Has the printer ever functioned as expected?

Have you ever used all OEM inks at the same time?

The Yellow is not printing. Is the wrapper taken off? If not then no air flow into the cartridge as ink leaves and Yellow will not be able to flow out. Any error messages with the Yellow?

You need to start at the beginning. Install ALL OEM cartridges - no aftermarkets. Get the printer running properly before trying aftermarkets. Get to know the printer functions, controls and output. Then you'll have a baseline to compare against.

Update

- the nozzle check shows yellow missing in posting #11 above,

run another cleaning cycle to check if any nozzles are coming back . Was there a tab on the cartridge which should be removed ? Some types have it to open an air channel to replace the ink volume printing away.

- Update - everybody is eager to help you so we have some overlapping postings...............

Everybody was in a rush to help that no one began with the basics to properly assess the issue.
