What printer has replaced the Pro 3880?

Refillable - A3 - you may have a look to ink tank printers by Epson like the L1800 or the ET-7750 with dye inks , or there are refill options for the Epson P600 if you prefer pigment inks. I'm less familiar with the offerings of other companies but the Canon Pro 100 with dye inks or the Pro10s with pigment inks come into my mind as well - with refill cartridges. The Pro 3880 is succeeded by the P800 as a A2 printer, and there is a P5000 up in the model range of A2 printers or a Canon Prograph 1000 but I'm not familiar with refill options for those. Epson is playing unpleasant games with the cartridge chips preventing 3rd party versions, auto reset versions in some sales regions. Refill accessories which work in Europe don't in the U.S. or probably elsewhere.

Yes, if the price was right and the 427 was modded to accept knock sensors and the timing was modded to exploit the lower octance. It would still be a "gas"! Not quite full tilt but still mind blowing.
