Problem solved at last! I made a call to Epson Support and, having established that the most likely cause was a communications issue, they asked me to print off a Connection report from the printer. As soon as I printed it I could see that the IP address I had entered on my MacBook for the printer was wrong. When I changed that, I could print once more.

Operator error - doh!

Thank you all very much for your input and thoughts.

If the print job just vanishes and no errors report, then Mac OS X is likely still trying to communicate using the wrong protocol or an abandoned print queue. I would reset the print system on the Mac and then add the printer only through Epson's own driver (avoid the AirPrint drivers). Verify the printer can print a test page without any problem.
Great input @donaldolsen
Apparently, it did end up being a communication issue with the printer. On my p900, I had similar issues to what you mentioned: I had to reset the print system, reinstall the Epson drivers, and avoid the infamous AirPrint drivers. BTW - welcome aboard.
