Why remove cartridges to refill?

If you have a Brother, Canon, or Epson and the cartridges are stationary, why not refill them in place instead of removing them from the printer?

Just give them a syringe/needle shot of ink once in a while.

when you open the fill hole at the top of the reservoir (Canon cart) ink can flow out of the ink outlet at the bottome. Although there is a seal around the inlet of the printhead some ink might pool at the cart ink outlet. Of more concern is the possibility that some ink might go astray as you refill in the printer and make a mess you would have to clean up. Better to have a full spare and just trade them out. Refill the empty later at your leisure. No more work and safer.

If you use the german refill method (my favourite method) for refilling canon cartridges then you must remove them from the printhead

And the GRM is so quick, especially if you use the small Inktec syringes and leave the needles on, you don't really need a spare cartridge.

Sometimes it is just not possible to refill without removing the cartridges.
