I haven't noticed any discoloration over time but when I make booklets, I use the Staples paper as the cover and an HP Bright White paper that is coated for dye inks for the rest of the pages. The Staples paper is obviously not as bright as the HP paper which is rated at only 97. But this doesn't seem to make any difference when printing photos. In fact, I don't think photo papers have a brightness rating like plain papers do.
