I've just recently bought a second hand Epson Stylus Pro 7800, prints great on Epson Gloss paper, really pleased with the results. Been trying to produce some line drawings in b&w on plain paper but everything just comes out grey not black as I expected. Have tried changing settings but have had no luck so far. Can anyone tell me what I am doing wrong?

It came installed with light black & photo black. Do I need to change the photo black to Matte?

All of them! LOL
If it shares MK and PK in the same ink cart slot then yes.
I am not familiar with the 7800 ink configuration but it sounds like the Epson 2200 which is also a K2 ink printer and you have to manually switch carts when going from Glossy / Luster to matte papers.
MK is a LOT denser and should produce nice crisp black lines. But don't expect LASER printer dark lines. But MK should appear darker that with PK.

That is correct, you need to replace photo black cart to matte black and change the printing setting as well for matte when you going to print on matte or plain paper
