Out of date cartridges

Hi all, newbie to forum, hope someone can offer some advice. Being a keen photographer I recently bought a HP 7960 off E-Bay for my black and white stuff and noticed that out of date cartridges are often for sale. Aside from the fact that they "self terminate" because of the inbuilt date chip which you get round by altering the pc clock, what about the quality of the ink itself? If they have been kept foil sealed etc shouldn't they be okay? Hope someone can be of help, cheers, Lol
