I can't get the inkjet head tape on the nozzle plate correctly

When I have finished recycling a cartridge and I go to put the tape over the nozzles I always get ink coming out of the nozzles and can't seem to stick it down without getting this problem. Is there a trick to doing this please?

You should not be using a sticky tape. If you have the proper tape, you should wet it with water before applying it.
