My next question is …. If it’s the same IEM ink, but in a different cartridge, will it just pour out? Or is the ink trapped in sponges?

160 and 330 ml carts are just an empty case with a tube in them. No sponges to be found. You can see inside one here:

I have not seen inside the 700 ml carts but I assume it's the same deal.

I am a life long Epson user and have been buying large cartridges of the same inks. Way cheaper. The larger cartridges like the PFI-1000 used in the canon imageprograf pro 1000 have no sponge. I have never found a sponge in 50ml on up but I buy 150ml on up to 700ml. Ink Stained Fingers comment above is dead on. My rule is for the canon imageprograf pro 1000 is to buy Canon Lucia Pro Ink. I always look for deals on EBay carefully. I got my canon imageprograf pro 1000 for $250 from a couple moving to New Zealand. My ink supply won't start showing up until Wednesday this week. Take a look at jose rodriguez printing on YouTube. Lots of play list just on this subject. Also check other that may fit your needs. Also a great place for info is https://www.precisioncolors.com/. If you order give him a lead time of 5 days or so. Recently moved from Canada to USA. My wife and I want to go the other way! Good luck Photog-art-printer.
