I thinking the other way around :)

What is each different paper for?. For example, X paper is better for landscapes or people portraits?, or it's just a matter of.texture preference?

For sure it is more a matter of preference, you won‘t be able to assign papers to photographic genres, as images within those categories can vastly differ.

Glossy papers have higher contrast and a larger color gamut, matte papers lend themselves more to a muted presentation. The paper‘s tone - from bright white to a more „natural“ yellowish - can underline the colors of an image and also its texture impacts how the viewer perceives the print.

In the end you have to try for yourself which papers you like and fit fit your style of images. The paper manufacturer‘s sample packs are a good place to start for that.
