Is it just the one document where it does this or every document? Sometimes a document can have corrupted data when printing, but I guessed you have ruled that out by printing other documents?
I'm not familiar with that model but some carts can have their chipped changed to fool the printer into thinking it has the correct region carts. Hopefully someone will chime in soon with a solution for you.
I doubt that they are genuine Canon printheads at that price, even Aliexpress prices are €50 and I'd not buy one of theirs. Some people refurbish old printheads but generally they are junk and are a waste of money.

Just a thought. Check the pins that make contact with the chip if you can get at them. Maybe there is some debris on the contacts and it can't connect properly to the cart. Could also be a hardware fault on that circuit.
Reading your comment about slicing and curing I thought I'd chime in. Slicing is using software to create a file that the machine can read, whereas curing usually refers to the process where resin hardens to a final solid print.

I see that Canon still sell that printer so maybe see if you can get one at a good discounted price. I'm very happy wioth the Brother DCP-L8410CDW but its a much bigger beast and does duplex scanning & printing with sheet feeding too. Its also more expensive, however it is one of the few left...
Could be dangerous to attempt a firmware update if it is rebooting as you might get half way through the update and then the printer shuts off and you have corrupted firmware. One other suggestion if you are happy doing soldering is to power off, strip down and resolder all the power supply...
Quite possibly an intermittent fault in the power supply. If you have a setting that lets it reboot itself after a power loss try turning that off, leave the printer on and see what happens over time.
