If the firmware was updated with the new cartridge info, can the printer be reset by reinstalling the original programming on the original CD?

What happened - what are you trying to acheive ? You can install the drivers and typically some other utility software from CD but a reset of whatever type is not possible.

I've had this printer for about a year and don't remember if I ever allowed a upgrade or not. Is there a way to tell? I'm using a starter set of cartridges. I bought a bunch of them. I did delete the auto upgrade in the software.

so you won't get an unvoluntary firmware upgrade, I wouldn't do anything at this time, your printer is apparently working. The firmware version is printed as part of the nozzle check.
