What is the name of the paper size used to make landscape spread booklets?

Your getting a bit mixed up with your paper sizes, there is no such paper size as 594x 210, booklets are usually done on SRA2 size and SRB1 size.
The RA and SRA paper formats are Untrimmed Sizes" and cover untrimmed raw paper for commercial printing. The RA and SRA sizes are slightly larger than the corresponding A series sizes to allow for bleed on printed material that will be later trimmed to size, often for bound publication...

If you follow the RA and SRA size papers then you’ll have no problems..
